Ingredients
1 lb ground lamb meat
3 oz feta cheese, crumbled
1/3 cup red onion, diced
1/3 cup Italian seasoned breadcrumbs
1 egg
1 tea extra virgin olive oil
1 tea dried parsley
1 tea greek/Mediterranean seasoning blend
Salt and pepper to taste
Instructions
In a large bowl combine the ground lamb, feta crumbles, diced onion, egg and seasonings. Mix well with clean hands.
Once it is combined add in breadcrumbs. Again mix very well.
Roll into 1/2in-1in balls, depending on preference. Add balls to a clean plate or tray making sure that they are not touching.
Place the plate in the fridge to chill for 20 minutes. This step is optional but it does help set them.
Preheat oven to 375
Put meatballs on a oven safe tray making sure they are not touching. This helps with crisp outside.
Once oven is hot put the tray in the oven, cooking for 30 minutes or until meatballs reach desired crispness and consistency
